Why would you need flat platen? I never us flat on the hollows. Just grind thinner and thinner on the wheel

Not really. If the razor is ground properly, setting the bevel is a 5 minute job on a 1 k stone.
The 2 likely reasons for such problems are bad heat treatment or bad geometry .
