The lapping surface will have an influence to the surface on the stone you lap, if you finish lapping on 2k grit paper or a higher grit stone the surface will be finer. ...

The reason it was shiny before lapping is probably because the surface have been polished by use over time, mine was exactly the same, I wouldn't worry about it.
