The 800 grit stone is close enough to the 1000 grit stone, it can be counted as an 1k. If you can set your bevel on the 800, you can try one stone honing, and as far as I know with my Japanese...

How about something in the 3-5k and then use your finisher? That is, if you really want to buy a stone. The stones you have, should work nicely in a progression, and I don't think you need a 2k for...
