You will get some very smooth edges from the LG....
You will get some very smooth edges from the LG. They are a nice and soft stone. I have a LG bout and you can defiantly tell a difference between it and my other vintage coticules.

I wouldn't think you would need every grit. But I did read somewhere on here that someone said that it reduces strokes, thus leaving less room for error. You are going to have a learning curve...
