obviously the toe is slightly worn away from previous honing, you are honing dead even (Congrats on that BTW) so you are...

Try 2 layers of tape to get an even bevel...

Breadknifing is for Extreme fixes big frowns or chunks out of the blade :(

That razor just looks to be just a wee bit off, try adding a second layer of tape to get the bevel to pop even, then drop...
