I was thinking about this last night, could it be that the OP is referring to the ends of the razor and not the sides? So, eg the toe is sharp but the heel is not.

I'm not sure I'm getting what you mean by one side being sharp and the other not. The point is that you have to get the bevel to meet on both sides at the low grit before moving on to polishing. Good...
