To me the real variation with safety razors came down to the blade you put in them. Sure there were some differences but it was always about the blade, the edge in question that mattered most. My Edwin Jagger ended up as the only one I used.
Have to agree with OCD, the Edwin Jagger DE89 was my first DE. Good solid build. ended up with two but have since given both away. Still collect them, but having too much fun with the straights to even try them, I always intend to. Two ups I will give one away to get friends and family started.
I prefer the single edge. The Ever Ready 1912 does a pretty nice job for me.

I have two (2) - I just cannot decide between the two.
They are the British Ever-Ready 1912 and the GEM Micromatic Clog-Pruf.
For me, when paired with the GEM PTFE coated stainless blades, they give me a superb shave :)
For conventional DE safety razors, my favourite is the Gillette open-comb two-piece that came in the (IIRC) 66/77 sets.

This is a tough one. I love my vintage gillettes to death (red tip, fat handle tech, 40's SS, LC new)...but it's hard to beat the efficiency and results from my R41 head and classic Weber handle.
I'm not sure I can pick one, but these three are my favorites: Gem 1912, Schick Injector or a Gillette Aristocrat
Mine is a 1956 Gillette Rocket HD, which my father bought when he married my mother. Unfortunately, he is no longer with us, but I enjoy using the razor maybe once a month or so. I actually learned to shave with this razor 40+ years ago, before I "progressed" to a cartridge of my own.
Funny how that cartridge razor isn't around still. :-)

wondering if there was a difference in DE's (in the way they hold the blade) or if it's just the blade itself.
I almost feel embarrassed to publicly announce my DE is a Micro Touch One. But it's mine and it gives me a great shave,
with my preferred blade, the DORCO Platinum ST300. With that said, I'm back to researching DE blade samplers.

GEM 1912 without a doubt
I only own 1. It was given to me by my late Father when I turned 17 (1987). It was my daily razor up until about a 2 months ago (when I returned to a straight), except a short stint of disposables while in the Army and a short stint with a straight in my early 20's (until "life" got ahold of me).
I would like to find more info on it. However, there is, of course, more Gillette info on the net than Schick info.

Mine is an english Gillette RFB 77 thin handle.
I have a 1964 Gillette adjustable that I use when I don't use my straights. I have a couple older 3 piece ones but I always gravitate to the adjustable.
It has been 2 years since I posted to this thread and things have changed a bit in the mean time. My Wolfman WR1-OC head with increased blade gap on the same Ikon Bulldog handle has displaced the Muhle R41 head on the same handle for favourite spot. The WR1-OC head is a true open comb with better build quality, all machined stainless, that shaves as brutally close as the Muhle R41 but with added smoothness. Ask me again in 2 years and the answer may be different then too. :)

As long as injectors fall into the safety razor category, then the PAL adjustable is my favorite!
The only DE I ever use these days is a Merkur 34C aka the HD.
What I would have wished was my favourite razor, but I know of only one on the planet, and it's not for sale, is this one:

Edwin Jagger closed comb "Chatsworth" is my only go to DE. I load feather blades. It gives a shave that is competitive with a str8. Easy to clean. A classic IMHO!
As far as I know, it is made by or called the Essor and is of French origin. The photos are by a chap on SMF who was oh so lucky and found one in remarkable condition.
In my search, I've seen quite a few Essor single edge razors, but never a DE.

My Edwin Jagger DE89 always gives a great performance. The thing is just fool proof.
I don't do a lot of safety razor shaving lately but I have a Gillette Adjustable ("fat boy"), a couple of New Types (long and short comb, both pretty aggressive), a Super Speed, a Tech, and a travel Tech (these last three very mild). I think they are all really cool.
But I also have an Old Type, and hands down for me the best shaver is the Old Type. Just the right balance, compact head for tight spots, super controllable. I think it was the height of design, a perfect razor of its type.
(Also kind of off topic -- I love the Rolls but that ain't no safety razor!)
I like short fat handles and thus lean toward three piece razors where I can mix and match heads and handles.
#1 Favorite: Muhle R41 Head on a Maggard short, fat, heavy handle. If feels heavy in my hand which I like. This razor is aggressive and provides a great shave.
#2 Favorite: The standar Merkur 3 piece head on a short, fat, thick handle. This less aggressvie razor is awesome.
Honorable mention: Merkur 38 HD. I consider this a step up from the hugely popular 34C. The head of the razor is the same on both. The 38HD has a long heavy handle, which will appeal to those wanting a heavier razor.
I have a 1959 Gillette Fatboy that I adore. I take it when I travel and when I'm in a rush. I use Wilkinson blades on #5. Very smooth, comfortable shave.
30's Gillette Tech on the rare times I use a DE. To me it still and will always be the perfectly designed DE for a daily shaver
Not sure how long ago I replied to this thread, but I must have said the Merkur 37 was my favorite safety razor, well ......... the game has changed. The Razorock Wunderbar is my huckleberry nowadays.
I forgot to mention which are the best blades for me as that is critical.
Gillette Platinums, white box, blue letters, 5 in the lower left corner (Gillette has multiple Platinum blades)
Some have said these are the old Swedes under a different name, though I can't say for sure. They are made in Gillette's St. Petersburg Russia facility.
Pete123, I've loved that photo you use as an avatar. If I'm not mistaken, I believe that was the photo that was the subject of a lawsuit where some guy claimed that the monkey, who took the selfie himself, owned the copyright. (he didn't) Are you aware of whether I am right that this is the one?
My birth year/quarter (C1) Red Tip Super Speed loaded with a Gillette Silver Blue is probably my favorite. A close second is my first DE: a post war ball-end Tech loaded with a Feather. Both give incredibly close, smooth shaves. On the days when I don't use a straight, these are my favorites.
Depending on my mood (and amount of stubble), my favourites are either a 1969 Gillette Tech, or an old Gillette ball end open comb (don't know the year). With Feather blades!
I could never get the hang of the Gillette Rocket.

Why? It's lightweight, the textured handle doesn't slip in my often wet fingers, the old-type blade cap is thinner, the fixed blade angle is "Goldilocks" right... and it's as elegant as it is well-designed.
