Every contest/giveaway since I have joined the forum (and myself entered them) results in my inbox being filled with the requisite: thanks, sign me up...I don't mind especially but I don't actually understand why this is happening.

When you reply to a thread, you are automatically (I think) subscribed to that thread. To manage your subscriptions, click 'settings' at the top-right of the page, then 'subscriptions' under 'my subscriptions' on the left of the page that opens. There you can choose to which threads you are subscribed/unsubscribed.

Kind of embarrassing...somehow I did not think of the Giveaway as a post in the usual sense, even though it appears in my inbox the same way all the posts I am subscribed to do..but your information took me into some of the mechanics of the site and I really appreciate that.
