The problem with trying to learn honing on an old razor like this with problems around the shoulder area, is that it's much more difficult than using a true and even edge/spine. What Glen was pointing out is that the shoulder is interfering with how the bevel will sit on the hone, consequently it will be difficult to get a consistent edge along the whole length. Experienced honers will overcome the problem but it is better in terms of getting a feel for tempo and pressure if you have an easier example to practise with.
