So, I bought her 2 matching Shun, 6” Santoku Premier’s and matching 6.5” Nakiri, hammer finished in patterned VG10, and matching dark brown Pakkawood handles. She likes the weight and balance of the short blade and mostly cuts vegies, so the straight blades work well for her. Bottom line, she always has a sharp knife at hand.
When the stones are out, all 3 get a quick honing on Diamonds and Washita finish. It was a bit pricy, but I got them at a smoking sale at William Sonoma.
