    Bone was living tissue,as such has blood flow,The holes (channels) are called Halversian canals,The oraganic materials you see (in the pores) is blood.

    The Haversian canals in the region called 'compact bone' comunicate with the osteocytes in the region called 'dense bone' - we use the outer, denser periphery of the bone rather that the interior, which gets increasing more sponge-like as you approach the centre.
