I want to try my hand at restoring a razor, but I'm not totally sure where to start. I have the norton 220/1000 grit combo and the 4000/8000 grit, and a naniwa 10k grit hones. I'm still looking around for a razor to pick up to restore, so I thought I would ask if there is a good thread or anything to check out before I get started.

Sure thing, and I really do mean to read all of the wiki section, and as many threads as you can stand before getting your feet wet. You'll see tons of methods, mistakes, and ideas that will give you perspective for the approach you want to take.
After that, if you have specific challenges or questions, check the workshop/forge section of the forum.
