So I have this big 'ol' chunk of cow bone, and I want to rearrange its appearance into a set of scales.

I have the option of cutting out the slabs either as around the diameter (like pie slices) or like quarter sawn lumber

Does bone have a "grain" that may be more prone to cracking when cut one way as opposed to the other?

If anybody here has experience with boning. I would prefer to learn from you before I ruin anything!
