Well there's the honing and stropping of course, but one of the main differences during the actual shave is you don't have to worry nearly so much about nicks or scrapes or razor burns as you do when shaving with a Feather AC or even a DE. Human-honed straights are very mild and gentle compared to the harsh edges of the DE and AC blades (and cartridge razors too, for that matter).
