Tapped a large maple tree for the first time and am trying to reduce the sap to proper maple syrup. It’s a supposed to be 40:1 reduction.
We’re getting a pretty good sap run with below freezing at night and fairly comfortable during the day so I put 3 taps on a sugar maple that has about 3 foot diameter.
Won’t do it on the kitchen stove - a neighbour tried that and had to replace the drywall in the ceiling over the stove.
Tried it on Saturday on the propane bbq. 2 gas bottles later I got 1.5 litres of fairly light syrup. That started out as 40 litres of sap. Actually prefer it to the dark stuff which I find overly sweet.
Today I put a deep roasting pan over my large Solo stove and cooked about 30 litres of sap down to 1 litre of syrup. It’s a bit darker than yesterday’s batch, but tastes good.
