I find it's much easier to peel the eggs before you boil them.
Once or twice a year I get a thing for pickled eggs and I end up making like seven dozens. I am pretty good at the peeling thing, if I cook them. I start with the eggs in cold water, heat up and actually boil for seven minutes. Move the pot with the eggs, and cooking water to the sink and brace it at about a twenty degree tilt and run cold water full blast into the pot for fifteen minutes. Then peel in the sink after rolling against the side of the sink. I find it helps to chant, "Oma boma doma foma" as you peel them. It is important to properly dispose of the shells in a wood burning stove in a fire of 80% black cherry, 12% red oak and 8% blend of composted dog crap and fresh rose petals. If you don't do this the next time you plant eggs they won't grow.
Also FCC and the Dwarf are totally correct about not using fresh eggs. The older the egg, the larger the air space in the egg.
