Agreed! Istanbul is a must if you can wing it!

In one day (starting early) you should be able to see Hagia Sophia, The Blue Mosque, and The Grand Bazaar. If you have an extra day, Topkapi palace is quite a sight too.

Food is great there and if you happen to be there for an evening, don't miss out on nargile (water pipes) and proper Turkish Delight (lokum).
