It's not cast iron. They are inexpensive steel pans made in France by Matfer Bourgeat (spare me the comments). You have probably seen these used as Crepe pans in professional kithcens. They are beyond compare for coloring crepes and omelets and have superb non-stick qualities once seasoned (takes time). They are indestructible, but can rust and lose their slickness if not cared for properly. They need to be wiped and dried after use, just like a carbon steel razor. We don't use any Teflon in our house, thanks to these babies.
