    Real maple syrup is expensive because it takes a long time to make it. Not hard, but really long; it needs to evaporate slowly and the final product is 1/40 ratio. With 40 gallons of sap, you get one gallon of syrup. Then if they don't add anything to it, it last 2 months if refrigerated.

    We tap the neighbours tree every year with the kids and boil it on the stove. Didnt do it this year as she is in the hospital and cant speak so we cant ask her permission. Sure she would give it to us but would be wrong to just go ahead and assume. And yeah it takes a huge amount of sap to get 1 or 2 breakfast worth of syrup

    The sap we were cooking was about 35 to 1. We were judging by the garbage can full etc. though!

    One of the neighbors was selling sap and he was getting around 2.5% sugar he said. One thing I thought was interesting was the guys using vacuum systems are around 1.5 % They are getting paid by the sugar content. The 2.5% was around 40 cents a gallon.
    I sounded like a strange agreement because they didn't know for sure until the end of the season and how much the syrup was worth. He said it depended on Canada's yield.

    When it comes to maple syrup there is no substitute for the real thing.

    I love real maple syrup & real butter. I love pancakes plus I have one of those Belgian waffle makers! Reading this makes me want some with some hickory smoked bacon!!!!

    Buckwheat pancakes & Maple Syrup ......... whether Vermont, or Canadian, I love the stuff though I seldom eat it. It's in the fridge when I want it though ;

    This thread has made me hungry and I've decided to make pancakes and bacon for dinner tonight. Any recommendations on good pure maple syrup brands to purchase? I have a pretty darn good selection at my grocery store, actually too many. There's probably 30-50 different brands...

    I work in a huge Mennonite area, and most have huge sugar bushes on their properties. In the spring all you can see is smoke pouring into the air for miles. Every farm in the area sells maple syrup at the end of t drive way. Only thing I don't like about the Mennonite syrup is they've been known to burn tires during the boiling process.
