    I have a former co-worker that boils his own syrup, but he can't really sell any. He has to share with his family, which is quite large.

    As long as you pick 100% pure you should be good to go. Next most important thing is the grade. Your taste preference will decide this if all grades are available where you are. Most common grades are as follows: Fancy, Grade A Medium Amber, Grade A Dark Amber, and Grade B. You get stronger maple flavors the closer to grade B you get. In supermarkets the most common are medium amber and dark amber. Look for this info on the label. If it's not there pick a different one. If you live anywhere near a producing region it's worth the trip to a sugar bush especially very early in the season. The fancy grade is a great light flavoured product with hints of vanilla. It's the early season syrup and doesn't normally make it to the stores. We like using it on food you don't want to overwhelm with the maple flavor.
