    Default Any KimChi lovers/makers?

    I enjoy eating and making KimChi (Korean fermented vegetables). Does anyone else get into eating this stuff? Part of the reason I like it, believe it or not is that to most people, the stuff really stanks and is typically very spicy. My wife, for example can't stand the smell.

    I eat it when I can find it. Making it is probably out of the question. I ate a lot of it when I lived in South Korea.

    Mmmmmm, good stuff! It's actually pretty easy to make; I never knew until a few years ago that KimChi is more of a general term and that there are many different types of KimChi, some that ages for a very long time before being ready, and others that are more like a quick watery salad meant to be made and eaten pretty much right away.

    Alan, if you spent time in Korea you probably drank Soju as well? An army friend of mine stationed there in the late eighties introduced me to Soju. Let's just say I have not had it since!

    My wife is from South Korea, so yes, kimchi is a mainstay, but not for me so much. I prefer what is called 'cucumber kimchi' over short grain rice.

    There are MANY receipes on making different kimchi's on the net.

    Yes, I drank Soju many times. Often in the classical "ammo" bowl. I went out drinking once on a Saturday night and awoke on a Tuesday afternoon.

    SoJu...perks up at that... whoooeeee its been a long time since Ive had that. Dang stuff sent me past bullet proof to invisible on more than 1 occasion.

    As far as Kimchee goes I dont mind the cabbage kimchee but I preferred the turnip kimche. Used to get it outside the gate in Taegu...

    Kimchi and soju, you can tell who the korea vets are. I used to like drinking a half bottle of peach Oscar and then pouring in a small bottle of Jinro soju, give it a few swirls and away we go, well beyond bullet proof and invisibility.     considering I like just about anything thats been "krauted" I should like Kimchi but I haven't had the chance to try it yet. For now its just fermented cabbage and anything pickled I can get.

    I love KimChi but don't know much about different varieties. Chrisl and others: Any great standard recipes you could point me towards? I like it to be particularly spicy.
