    Default Garlic lovers....my extreme aioli

    Mayowhat?

    Actually, I found this recipe some years ago in a really cool organic farming book complete with recipes. I crave this stuff periodically and when I make it, I find slathering it on pita, crackers, etc is wonderful. It's great as a condiment for slices of pizza too. Spread it on thick and mmmmmmmm good.

    Ingredients:

    • Fresh garlic cloves peeled by smashing with the broad side of a chef's knife. In the accompanying photos, I used a bulb. That's about half the size batch I would normally make.


    • Good extra virgin olive oil.


    • Good real sea salt, celtic, fleur de sel, etc


    • Fresh squeezed lemon juice

    That's it. Blend all in a food processor until creamy adding oil and lemon juice as needed and to taste. My wife and I like a lot of lemon juice.

    Looks...garlicy.

    Heh heh. I like garlic, but when you use too much of the raw stuff, it's so gross how the smell lingers and seeps from out your pores the next day. Bleghh.

    Now if you were to wrap that bulb of garlic in foil, add a little oil and then toss it in the oven for a while before turning it into goo, well...that might mute its powerful flavour enough for me.

    There's a restaurant here in LA called The Stinking Rose where even the ice cream is garlic flavored. But everything is really well-made and taste great.

    I like garlic all ways. But roasting takes the spicy hot bite out of this stuff. Some garlic I've used can be so "hot" the paste like this it makes is similar to a horseradish.

    I'd love to go there. I've been known to take a few raw cloves of garlic and chew them up with some pieces of good dark chocolate with cacao content of 70% and above. Garlic and chocolate together is great IMO.
