We really like Burrata. We normally enjoy it spread on toasted French bread with olive oil. The wine shop that we visit regularly for wine tastings will pair cheeses to compliment the wines being served. They will do a Frommage Fort, they blend small pieces of left over cheeses in a blender with white wine & garlic and spread it on French Bread and toast it in oven. All are fantastic!

I love almost all cheeses. From Stilton to mild queso fresco.
Two cheeses I have not liked in my life: Gjetost and Limburger. I even bought a small brick of Limburger recently with the idea that I would ignore the smell and focus on the taste. It simply was not pleasant.
The Limburger did bring some amusement in our house when I had it though. Opening the zip loc and having my family take a huge whiff. After burying his nose in the bag, all my three year old could say loudly and with extreme urgency was: "CLOSE IT! CLOSE IT!"

Pepper Jack- Good general purpose cheese, I like the spiciness
Smoked Gouda- Several Thanksgivings ago, I shredded up some of this in the mashed potatoes. It's been a holiday tradition every since. Smoked
Gouda also works well for cheese grits, especially when served with ham, shrimp or smoked fish.
The older I get, the better I was

The first time I tried an aged Gouda (4-5 yrs) it was a life changing experience. Nutty loooong lasting complex flavor.
