    Interesting read, I missed one aspect: what do you use to stuff the mixture into? Pork gut?

    Check out this site O'Hagan's Sausages, Winner of Britain's "Best Sausage Maker" Award
    I frequented his original shop in Greenwich at least once per week he made the best sausages I have ever tasted bar none, and some really inventive recipes.

    i love good potatoe sausage adn scrapple with eggs ive never made potato sausage before, might have to try your recipie tim, thats after we get you a kick a.. smoker built lol

    I have never tried smoked potato sausage before! MMMM... That would be an interesting experiment.

    Today for our Christmas everyone cooked something from their ethnic background. One of the foods was Empenada { I hope I spelled that right. }from Argentina. You deep fry it. While I had the grease hot I tossed in some potato sausage for an experiment. It was an interesting variation. Good but i wouldn't fire up the deep fryer just for that.
