similar range here I start a test bevel from about 8-10 thou & have finished down to about 3 thou edge with out issues on 1075, 1095 & O1 so far
I'd say a HT issue also
cant make it worse so take it back a bit more & see if the edge retains as it could be the decarb as mentioned from HTSaved,
to shave another day.

That looks like the edge overheated maybe... but it might be that it was just too thin... i can usually flex the edge with a thumbnail when thin enough... if it just folds it probably overheated...
