You're right, and so is Kees. I've got mainly 2 pin razors, but recently acquired an old Wostenholm with 3 pins. The (plastic) scales are broken right at the 3rd (interior) pin. And, if you do have good quality bone or ivory or wood scales, from a structural point of view I'm not sure you'd need 3 pins.

Having said that, I guess in theory 3 pins is better (more is better, right?).

I prefer 3 pins. Besides everything that has already been said, it's a safety feature. Without the third pin the blade can get jammed into the scales and, sometimes, the edge can come out of the back and cut you.

The best of all worlds is a 3 pin with the third pin hidden.

Actually, I just had a shave with my newish Dovo and noticed that, while it does not have a 3rd pin as such, there's a molded plastic stub inside the scales where the 3rd pin would be acting as a spacer. Is that what you mean by a hidden 3rd pin? (Funny how you never notice these things ... )

It could be. SOme of the upscale razors actually have a pin in there but you don't see a head outside the scales.

    Joe, excellent info.
With exotic woods sometimes the 3rd pin can take away the beautiful graining. I might give this hidden pin a go. Quite simple really, just a small 1/16"locating hole inside each scale to hold the stopper. Alignment will be a bitch though. I would also use glue of some kind to stop flexing at this point so the pin doesn't spring out if the scales flex too much.
