Speaking as an amateur honer, who only does his own razors.

For the razors needing a bit more 'vim & vigour' on the edge, I don't begrudge any extra time spent using my 1k Naniwa SuperStone as compared to a coarser waterstone. I really enjoy honing, so the extra-time is not an issue for me. I can always pull out my well used DMT 1200 if needed.

I can see for the professional honer, time might be a consideration, as they are very busy chappies.
