Thinning the shoulder of the bevel is easily done by honing with a little more torque than normal on a flat stone. You simply don't need a convex hone

I mean, I get that there can be value in lost arts. Hell, look at us shaving with straight razors for example. I also understand the point about how they did actually do it and someone isn't just making it up.
You know what else they used to actually do? Crap in a hole in the ground, carry water from the river, blood let, burn witches, believe the world is flat...just a few examples.
