    Also, looking at the chart, 8000 Japanese is higher than 8000 Norton. Do you concur?

    If Norton uses the ANSI system the 8000 would be finer than a japanese 8000, yes. but I doubt so.
    The comment was in german and had a lot of kitchen knife sharpening experiences. I've translated whats important for us and closed the window, sorry.

    If you look at the chart I posted Norton is listed as around 3 micron, where JAS 8000 is listed as 1.2 micron.

    I have my own chart. 3 micron would be 8000, yes.

    That is what I do not know. Astronomical number.
    I cannot guess it because there is an algorithm function behind those comparisons that I can not handle.
    Maybe I can ask someone.

    Anyway, if they talk JIS at Henckels, they have a hone in a grit size that I have already.
    Its ok, but there is lots of other hones between this one and shave ready.

    According to my chart 3 micron is 4000 JIS.

    also all charts I have looked at, including this one from Norton themselves:

    List 3 micron as JIS 4000.

    Norton uses JIS btw. So if the Henckels hones are JIS, then they are the same as the Nortons.

    Sorry I misread. The Norton Chart lists J8000 as 3 micron, and J4000 as 6 micron. The othe rtwo charts I posted though list J4000 as 3 micron, equivalent to F1200. J3000 is listed as the same as F1000 (I found that article on amazon.de, and this is what that knife sharpener said, as verification). J8000 is the same as F2000 at 1.2 micron. However, the Norton chart is slightly different. It does not give F-grits, only P-grits, so we can't really compare, except that it claims J4000 is only 6 micron and J8000 is 3 micron.
