    Hello Bob H. What is it that you mean "don't ever not knock the plate down before the first use"??? What is it exactly that you are telling us to or to not do before the first use???? Please clarify for me as I am kinda new to all this lingo. Thanks much, Sonny082

    there is a kitchen supply shop in the us that has them for the same price. I can PM you if you want the info

    You should scrape/knock down any high spots before using it the first time. There have been instances when that was not done that the DMT plate left leave ugly disconcerting scratches in the hone being flattened. Happened to me for one. If you do a quick site search there are a few threads on it and how to cure it.
