is 440 ss even good enough to get razor sharp? i've never had any luck getting cheap hunting/pocket knifes of the same as sharp as carbon steel.

All 440ss is not the same. There is 440a, 440b, and 440c.
440C is used in a lot of knives and at one time was the super metal of the day.
It hones quick, you can get a sharp edge with it, but it dulls fast.
440A is the cheap 440. It is soft and brittle. It's difficult to get a smooth razor edge on it because it is brittle.
440B is about the same as 440A, it just has more carbon in it.Some people never go crazy. What truly horrible lives they must lead - Charles Bukowski
