Before you bust my chops about the pencil grid, I'll quickly state that I normally just look at the color of the hone to see when it's flat. I think the pencil grid is good for newbies.

I usually flatten the nortons until the black and grey is gone, and the surface is virgin white again.
At that moment I assume it is flat enough to be used. Perhaps not sub-micron flat, but enough for all practical purposes.
