Not a clue whether or not you're right "in theory" either, but in practice, I've seen exactly what you're talking about and you're dead on.

I recently purchased a "shave ready" razor that really wasn't, and all I have is a 2-sided barber hone, so I was considering sending it out to be honed professionally.

What I tried first, was to hit the barber hone as I normally would, which helped, but didn't get it "quite" there. I shaved with it twice, and did the barber hone again, but very lightly, even for a barber hone. (hadn't seen your theory, just didn't want to over-hone) and when I shaved with it again, I found it to be a fantastic shaver. Very smooth.
