    Rick,

    I rely on the thumb pad test although it might take a bit to educate your thumb. Jimmy always says to feel how a DE feels when you feel the blade running your thumb pad sideways on it lightly. This is a good way to feel what sharp is. I always tell people that when you come off the 1K, the razor should feel like a sharp pocket knife and what I mean is that with a very light touch, you know the razor feels sharp and it doesn't want to let go of your thumb pad (this is what I call sticky). When it's there, I move on to the 4K.

    Usually, I will use either the 12K, 16K or a Natural off the 8K and so far personally, I have not found any benefit to doubling up unless I go to a 30K after a finisher.

    I've got to develop my thumbpad test better, yes. I'll have to try to educate it with a DE blade.

    Is there a such thing as overdoing it with your bevel setter?

    You can create a burr on the 1K with too much honing, but more times than not, it's getting the pressure right and getting to a good bevel that is more problematic to new guys.
