I'm pretty new to this but if you wanted to create a steeper angle you'd add more tape & create this new secondary bevel, but over multiple honings you'd eventually remove enough metal to end up with just a singular bevel at the new angle anyway. I can't see how it would make any difference as the only thing that matters is the very edge. If the edge shaves well at a certain angle the amount of bevels is irrelevant, or am I missing something?

I would say that any bevel beyond one is potentially problematic. For example, if you hone after double beveling without tape, then you have to work a bit to get back to the original bevel angle. If that is your goal, then the point of the original double bevel is unclear. I just think that a double bevel as a solution to a poorly-shaving edge is not as good as getting the original bevel right. If you can do it with an extra level of tape and create a double bevel, why not just eliminate that level of tape and get a single bevel done right? I use three layers on everything I hone, so I'm not against tape. I'm just against double beveling as a solution for getting sharpness when a single bevel done correctly will get the same job done.
