Not 1/2" of water, the water should cover 1/2 of the egg, so slightly more water
She uses 6:30 minutes I use 6:00
She also doesn't cool the eggs the same as I do I keep them in the pan and pour and change at the same time, leaving the eggs sitting in the cold water. It also helps when doing the full peel of the shell.
As too room temp eggs, this is always ideal, BUT it takes 2-3 hours to do that, so I have tried to adjust all my egg recipes to cool eggs, so I can make them within 30 or so minutes

If it is only a few seconds in cooking not that big of a deal but if I wanted room temperature eggs I would take them out before I went to bed. Or buy unwashed eggs and don't refrigerated them to begin with.

Back in 1985 when my company opened a new and bigger grocery store I was transferred to it.
At that time eggs weren't stored in a cooler, they were left out at room temp. However as government concerns of salmonella grew eggs were then stored under refrigeration and are to this day.
As to finding 'Unwashed' eggs goes 100% of ALL EGGS sold in commercial stores are not only washed, but in water that has bleach in it. It doesn't matter if they are white, brown, organic, open range etc.
With all this said--how I would love to once again walk out to the chicken coop, run my hand under a hen and then take an egg in and cook it.
OH! By the way------in days gone by it was Impossible to contract salmonella from eggs-------only from the flesh of the chickens-----however it mutated so that it can be found in eggs however I believe that it's something like 1 on 20,000 eggs.

This discussion could open a case of eggs....

This morning was Kodiak power cakes with homemade cran-blueberry jam,Russian sour cream and Greek coffee. Russian sour cream is slightly silkier and liquid than Western and not as sharply sour. It's almost like Creme fresh
