I think that I am going to go hog wild. A number of years ago, how many I am afraid to say, I was in grad school at the University of Florida. There was a well known down homey eating establishment called Skeeter' Big Biscuits. The were known for their biscuits which were, well, big as the name implies, like the size of a bread plate. By the time I got to town, they had a couple of locations but the main branch at that time was a large space in a shopping center on NW 13th street. I was open 24/7 and we patronized heavily by inebriated students after closing time at 2am. The most popular cheap specialty was a concoction called the Asher Special. IIRC, it consisted of one of the big biscuits with fried egg, hash browns and a slathering of country gravy all piled up high. Great hangover prevention, no? I was a grad student, so I could actually afford breakfast meat unlike some of the undergrads, but I had to try it once. it was filling to say the lear and quite good at absorbing any alcohol that was still in the stomach. I do not have the huge biscuits, but I think that I will try to create a version myself using sausage gravy instead of plain gravy because I can still afford breakfast meats. Although the taste way get washed out, I still plan to use the duck fat to fry up the potatoes because, well, it must be done. I'll let you guys know if i survive.
