Thanked: 580Well, Monday nights dinner was superb. Black turtle beans this time, my darling wife says they are better for our blood type......
Made a wild apple and feijoa crumble with vanilla ice cream for dessert so we didn't over do the beans.
Don't mind a bit of Cajun sounds myself, introduced to me by an Irishman...

I have to say this has become a regular...
Opening line "It is sometimes said that a good Red Beans and Rice does not have an actual recipe". Have tweaked this a bit over a while to our liking, and I'm not sure a ham hock is the same as a bacon hock, which is what we get. Smoked paprika is delish in it. Much prefer the black turtle beans as well.
Winter here, so near everything is slow cooked on the fire this time of year. Best way to cook it.
It seems whenever I make this, just like when I am on my way home from fishing, the family arrive...
