    Great thread and bump-up, I made a batch this past Monday and the SWMBO was thrilled..."you should do this every Monday".

    I also did a load of towels in the wash to make it official...

    +1 - I've found the overnight cold water soak with rinse to work better than the "boil and pause" or any of it variants.

    High quality, new crop red beans (Camila) is also key. The difference in cost per serving between the best and "meh" is a few pennies per serving...and you are worth every penny...

    and in the other direction old overly dried out meh beans with no soaking will produce windy results.

    The beans were soaked over night. I think the main problem was not the quality, but the quantity of said beans consumed.
    Bugger the one month ban, it is on the menu for Monday...

    It really is a Simple Hearty Tasty dish...

    I am going to try it this summer at my Sister's using Chicken Thighs and Chicken or Turkey Sausage since they don't eat Pork...
