I had chocolate covered bacon somewhere out West years ago-it was just as good as it sounds! I always make bacon with pancakes too, and pour maple syrup on it. Bacon and sweet work well together.

I can't remember but I did make some 'candied bacon' as part of a recipe. You just laid your thick cut strips of bacon on aluminum foil, then dusted them with light brown sugar and bake until all was bubbly. They were then refrigerated to be used later in Bacon Ice Cream.

I never got around to making the ice cream but the bacon candy was great! The grand kids also loved it

I did indeed make some candied bacon Tim.
Made it with maple, brown sugar, and most recently I made it with maple and woodford bourbon reduction that was just killer.
