    I had planked salmon in Cape Breton last summer. The fellow said they had been using the same maple plank for over 15 years.

    I asked if he had ever burned a plank and he said that the owner of the restaurant told him if he did, he would need to find other work. There wasn’t even a scorch mark on it.

    I too like my salmon. My wife insists it be cooked outside on the rec-tec... Coming off the grill right now.
