Thanked: 4206G’day gents. Terrific read this dinner thread. Enjoy the diversity of fair being devoured tonight.
Last night was roast beef up here, on homemade buns with Caesar salad and apple pie.
Tonight is turkey, ham, mashed potatoes and green beans, pumpkin pie for dessert.
Going to be a boat load of leftovers.
Cheers and good fortune, one and all."Depression is just anger,, without the enthusiasm."

Well we sure did do this right. She made fresh cranberry sauce. Asparagus, and the steaks couldn’t have been better, prime +, and mine at 118 degrees and hers at 125. Also made her an Oscar sauce, lump crab and a Bernaise. Couple cold beers now for my new bottle of Knob Creek

That's what I'm talkin about, Tc. A steak that fills the plate.!
I do 4 minutes a side, high heat. Typically comes out med - med/rare. Kinda just have the nack, you and I. We've both charred around 1000 # of beef or more. I'm somewhere in the "tons" now, but who's counting.
Still got about an hour before mine go to the barbie, taters are in the oven, didn't have time for the homemade bread rolls, wife was still finishing up cookie trays..
Ding.!! Let's eat.!

Dinner here was a bit late as my youngest daughter had things happening so I just turned the Traeger down and all was fine.
I added my smoke tube full of pellets to add more smoke flavor and everyone love the ham, well actually everyone enjoyed the entire meal.
Here's the ham ready to come inside. 130 deg internal temp.
No pics of the mashed Yukon gold spuds or the homemade baked beans but here's shot of Carolyn's rolls. 3 + inches tall, light as a cloud and oh so tasty.

The most important thing is, they appeared to be level, Roy. Seriously, though TC, Roy and Mike-Scrumptious-looking dinners all around! And Outback Mike-Even though I love my craft beers and IPA's, it dudn't get much better than an icy Corona with a steak (okay, maybe an ice- cold PBR in the summer while grillin'). Merry Christmas all!
