I fully appreciate your envy regarding the confit. It is truly a delicacy and special product to have on hand. I try to live with the ongoing concept of affordable, everyday luxuries. These are things, like wet shaving, that we/I can do that are accessible with the resources I have and can do regularly that make life full of luxury without the need for millions of dollars. I am continually grateful for my knowledge and ability to make this beautiful transition from raw, whole ingredients to a specialty item worthy of someone's envy. And I too would have preferred the duck as is. But the wife wanted to have some fun making pizza in the kitchen together. And I have to be just as meticulous maintaining a marriage as I am with my food. The quack was already out of the duck. I can't say the same about the wife.
