The larvae also dilutes the dressing with the excess water. Taking the gelatinous center away is a textural option. That salad is actually very hearty because of the cooked leeks. The tomato petals stick with that mouthfeel giving you something to bite into rather than slurp down. When I was taught to make salads I was told that you can sell ten cents of produce for fifteen bucks but it has to be good and that we better pay attention to details.

Grilled Eggplant ,tomato,red bell pepper, and made a spread out of smashed Cannellini beans,artichoke,lemon juice,hot sauce,garlic, olive oil,white wine vinegar....sammich !!

Looks good. I love a good Blue cheese burger and they are hard to come by unless you make it yourself!
The best one I ever bought was from some out of the way restaurant/gas station/ liqueur store in western Montana near Anaconda.
I can't remember the name of the place.....:gaah:

I have a friend who had an extreme bias against blue cheese - called it “road kill cheese”.
I made him a meal that started with dates stuffed with blue cheese and wrapped in bacon. Then we had a romaine salad with balsamic and blue cheese dressing. Followed that with a real fine steak with blue cheese butter topping and blue cheese in the mashed potatoes.
He went out and bought some blue cheese the next day.
Oh, Flaming Patty's does the Blue-cheese inside the patty too. SICK...
Need to see where they are tomorrow.............Good stuff.

Dinner for one turned into dinner for two. My wife insisted she didn’t really care for duck until she saw and tasted this. So I had to share. That’s ok. Any happiness that cannot be shared is not true happiness.

I could so easily down a shot of duck fat and not feel any guilt !! In fact a shmear of Duck schmaltz on some whole grain Rye would be a treat :angel:
I should've taken pictures and I didn't but I just made a few pans of paella and had it with a bunch of friends. It was sooo good!
The veggies were freshly picked from the garden a few min earlier - tomatoes, onions, peppers, cellery - there could be frost here any time so this is complete bonus.
For meat I used both chorizo and chicken. I didn't remember if I put wine or not in a paella, so I figured better be on the safe side and poured a bunch of white from Rioja :) There was only a little bit of saffron left but it was super flavorful so it did the job.
I'm super happy I got to do it while there are still awesome veggies and I'm sorry for the lack of pictures.
This is almost a smear of duck fat. It’s rillets. It’s a crude form of pate. It’s the meat from the duck confit, what they call confit jelly (a liquid kicked off from the cooking of the ducks), and duck fat. It’s pure duck flavor. No sugar. Attachment 296297

Wild rice...sautéed baby spinach in olive oil and garlic with sun dried tomatoes and baked boneless and skinless chicken thighs with homemade Alfredo sauce....and it was good !
