Love lobster,how do you cook it? do not like it boiled,I buy them live,kill them,remove the roe and the tamali (the ugly green stuff) mix all that with breadcumbs and garlic,remove the tail from the shell,restuff the tail section and put it under the broiler after cracking the claws and wrap with tinfoil.
What kind of steamers do you use? did 6 lbs of cherrystones last night in a butter and cream sauce,lots of garlic and parsley.
I do my steamers in 1 1/2 bottles of Beer until they open. The lobsters are put into boiling water....and when the boil returns to the pot....they cook for 8 minutes..I don't care if there are 2 lobsters in the pot or 10 lobsters in the pot.... My cook time stays the same. I like them boiled and not all fussed up....just let the Lobstah do the talking...sweet and salty !!
We just call them "steamers" for the clams...they are found on the East coast and New England.
Peasant soup: Ground turkey,Mushrooms ,onions,carrot,celery,orange bell pepper,whole wheat macaroni,kale,pumpkin seeds,coconut oil,some steel cut oats(you don't even know they're in there,chicken broth,a very nice Rogan josh curry mix for seasoning and some Braggs......lovely and healthy at the same time.

Venison coated in mustard and then rolled in crushed Pecans. Very good! I should have my daughter home to visit and cook more often! I see I went a little nuts with the pepper on the corn and potatoes.

Lite n Tasty n Supper : My take on a Waldorf Salad,.....Sweet apple(any kind),English cucumber,celery,red onion,red grapes,pumpkin seeds,mayo,sesame oil,pepper.......along with Sicilian olives and ham on Rye crisps with mayo.......dddeeeeeelish !

Made Italian sausage this morning. It's in the freezer now. It'll either go into sausage and peppers or on the grill.

Love making Sausage,can be kind of tricky getting the fat and meat content right tho.
I find that for most sausages if you're using a fairly fatty piece of pork shoulder you're fine. It's mostly the right ratio all by itself. If I'm thinking properly, I'll call ahead and ask for some fat trimming to compensate. But usually a fatty shoulder does the job.
Ideally you want 25-30% fat. Preferences aside, the shoulder should get you close to that. My biggest complaints with store bought sausage is that it's often too lean and under mixed before stuffing. The combination leads to a dry, mealy texture and lacking in flavor. I used to have a decent Italian deli in my neighborhood. It has since closed. And with only grocery store options, I've moved on to making it myself.
Not tonight's dinner, but I've ordered one of these and picking it up next Friday.
