Yeah, I'm favouring cast iron. Slowly replacing my cookware under the wife's nose lol.

Cast iron is amazing. I have all my grandmothers casts and Im sure they were probably her mothers before her because they just look ancient. I do still like my non sticks still for certain tasks they excel. I am starting to replace my teflon and stainless steel pots and pans with those newer ceramic ones. Same nonstick properties but no chemicals to leach in the food and metal utensils don't scratch off the coating. Thats a lot of pots to replace though. Everyone on my dads side was a chef or a cook at one point and I have thus inherited all these supplies. I have so many pots that police are investigating me for being a pot dealer.
I'm thinking of replacing my pots and pans with enamelled cast iron.

The problem with enameled Cast,Is they chip and get real ugly scratches,ours went to goodwill years ago.
Yeah dont do enameled. If anything do the ceramic coated stainless steel. Get the ones with thick ceramic. The difference between cast iron and steel when applied to cooking pans is that steel heats up faster but dissipates quickly, cast iron is the opposite. It doesn't conduct heat evenly compared to stainless but holds heat very very well. Guess what else holds heat well. Ceramic. So with a ceramic/stainless pan you get the best of both worlds with the added benefit that most of the ceramic deals out there are white on the cooking surface which is quite attractive to me. Also I have seen them in quite an array of other colors to suit your taste, albeit on higher end models.
Also with a well seasoned cast iron, you basically have an enameled pan. The oil actually turns into polymers that bond with the iron molecularly and well usually be more chip resistant. And if you do end up chipping them its as easy as just reasoning.
One of the 2 Rainbows I caught yesterday (15"). Put some Old Bay Spice and lemon juice..wrapped in tin foil and on the Weber Grill...nice orange meat too !! Gotta get myself out of this funk. I haven't posted here in a while, not feeling myself lately. But today's menu was rather simplified because I threw a pot of chicken stock on the burners today. So dinner was rather simple. I ate from the freezer, steak sandwiches . I Had a really nice skirt steak in the freezer vacuum sealed. I threw it in a water bath for a few hours and then seared it in a screaming hot skillet. Earlier in the day I made some oven dried tomatoes with a shot of thyme leaves. Banged together a garlic mayo and sauted some mushrooms in the skillet I cooked the steak. I slapped it all together on some bread I baked on Friday while my stock simmered.
Started off with and appetizer.......Tawney Port,Podda Classico cheese,Rye crisps, Sicilian Olives.

Main Dish......Caribbean style rice,Duxelle Crimini Mushrooms with leeks simmered in Bacon fat ,coconut oil and ghee, Pork,ginger,garlic,soy sauce and Cajun spice,Jasmine rice .......

Yesterday's dinner: Deboned a lamb leg, stuffed with garlic, rosemary and thyme, mesquite smoked on 80c/175f for 7 and a half hours. Last hour added some aubergine. Served with a sprinkle of truffle oil and an italian red wine.

Chicken breast tenderloins with a side of radiators and spinach in a marinara sauce.
I love to eat off a cutting board when the meal requires cutting.

Monday was a great day! :tu My youngest daughter along with my two youngest grand kids were here for the afternoon and a bit of the early evening.
It was a grand day! My daughter helped with straightening up the Boars Nest while the kids played and I worked on supper.
While I don't have pics of the entire meal of Smoke Cooked Chicken, Fresh Green beans with bacon, onion and crimini mushrooms and Homemade Potato Salad with store bought rolls with butter and jam and some Chocolate Cake for Dessert-----------------Here's some pics of the Chicken in progress;

Then into a 300 deg oven until up to temp of 170 degs (in the thigh) about 45 minutes :shrug:

My Humble Apologies for no pictures of the Incredibly 'and' Deliciously Tasting Supper.
The Smoke Cooked Chicken almost melted in your mouth. The Green Beans with all of the additions were Absolutely 'Perfect'. Oh and the Potato Salad had just the right 'tang' from the dill pickle 'Juice' that I'd added. I won't mention how the Chocolate Cake was. :hmmm:
With that said, If you ever get to Walla Walla, you are welcome at my table anytime! :tu
Also making a smoker to do this isn't that hard or expensive. PM me and I'll tell you how to get started.

This will come as a surprise to some who know me, but tonight I cooked curried sausages and rice for dinner, sorry, no pictures. I didn't think to take any for a post.
It was the best damn feed I've had in a while. I didn't want to cook a curry, because I normally despise them, but the wife demanded it, and as such, I just went all slap dash about the whole thing. Didn't measure anything, didn't take note of what herbs and stuff I just threw into the pan, but the end result was one of the best damn feeds I ever had the dubious pleasure of cooking. I'm going to have to try doing it again sometime and take a note of amounts to get some sort of an idea to replicate the first time around.
