Didn't take a picture cause it didn't look to pretty.
Anyways, I had roasted acorn squash stuffed with sautéed mushrooms and onions with sage. Absolutely delicious.
Tonight's dinner was hamburgers on the grill and fresh morel mushrooms. I was the only one eating the morels so I didn't cook many. Two halves were cooked in butter w/o breading. The rest were breaded with cracker crumbs, salt and pepper.

This was starting out as a Mock Stroganoff but then I decided it was better as a brothy soup. I was using ground pork for the meat.Nice crusty peasant bread to go along with it.

I never think about a photo until the foods all gone but tonight it was deep fried crappie fillets baked potato cold slaw and of course sweet (with splenda) tea. and sugar free key lime pie. the crappie was caught today.

A family favourite: Pasta alla carbonara.
We were out of "real" bacon, so we used back bacon. Pretty good, I admit.

Boy, that looks really good. It reminds me of an acorn squash dish I haven't made for several years.
Halve & clean the squash, bake upside down at 350 in a baking dish with half an inch of water for about 25 minutes, dump the water, turn over and smear each one with a tablespoon of butter and two tablespoonsfull of sweet orange marmalade. Sprinkle with a few grains of salt and bake another 15 minutes.
Yum! The center is filled with a nice orange butter sauce to dredge each bite through. It's like a vegetable turned into a desert, in fact, it's how we got our kids to eat squash. Now they like it any which way.
Thanks for the reminder, now I'm off to the store to buy some acorn squash!

Agreed. Bacon does freeze very well.
There's a bit of background to tonight's bacon switcharoo.
Tonight, I found out bacon doesn't thaw quickly enough for a carbonara on-demand.
And when the missus comes home and says "Carbonara now," she means now.
Luckily, I had been playing around with these breakfast egg muffins, which required back bacon. The switch was approved by SWMBO, and voila.
Another quasi carbonara.:shrug:
Currently we have vappu aka Walpurgis night celebrations going on. So our daughter, grandson and wannabe-son-in-law came here for the dinner made by mrs Sailor.

I'm stuffed. Grilled skirt steaks with ancho chili sauce, grilled onions, salsa, gaucomole, and rice. And there was some grilled corn to that you don't see pictured here.

Quick and simple - salad with shrimp. The shrimp I tossed with salt, pepper, garlic, ancho, chipotle, smoked paprika, olive oil, lime juice and a bit of the lime zest, some more after it was cooked.
For the salad I like best arugula but there was none at the store and the spinach looked pretty sad so red leaf lettuce had to do, I still threw in a bunch of mint leaves for good measure.
Albariño to go with it - always a good choice :)

For sunday dinner it's just emptying the freezer of whatever there's left. Obviously not anything doctor would suggest: bratwurst, bacon and halloumi etc. Well, dewberry juice is healthy :D
