Thank you all for the replies. I have finished my EJ cream and moved onto the next (RazoRock xxx), added glycerin and even changed to a different brush. While mixing my lather it seems to be much more slippery when tested between my thumb/index finger. Today I went a bit overboard and had too much water but everything seemed to work out okay. Actually the lather would have been fine had I not splashed water all over my face immediately prior to applying the lather to my face. I assume most of my inconsistency is because I am a noob and have only been mixing soap and trying to make a lather for a month and a half and I don't know all the subtle stuff yet.

Even thought the lather was soupy as heck, I managed to get the SR at a reasonable angle and did most of a first pass (still trying to figure out how to hold the darn thing for anything other than cheek and neck WTG). Finished up with my DE and ended up better than I normally do on the mornings when I am in a hurry to get to work and only use my DE. I suspect I need to by the dvd (to improve my technique) and then another inexpensive shave ready razor to use while I send the first one to get honed/sharpened.
