Joe Edson makes some fine looking symmetrical grind western style Kamisori type razors. https://www.pinterest.com/pin/393853929887862420/

If you're near Edmonton, Knifewear has some Kamisoris. If you are in the area, I can bring some for you to look at to get an idea.

I'm able an hour away. I'm interested in a double symmetrical bevel instead of the traditional asymmetrical bevel

The ones I'm familiar with are from custom makers - Robert Williams "The Purist" and some by Charlie Lewis.

I'm hoping to go and meet Thisisclog sometime in August. I am appreciative of all the help I have received so far.
