    I have the following stainless razors : Henckels Friodur, 2 Dovo EnVogue (Micarta) and a Wusthof.

    They all shave every bit as well as my carbon steel razors.

    Honing wise, I haven't had any problems with stainless blades (so far !!).

    I think as long as the razor is a quality peice, carbon or stainless, there should be no problems

    You mean "how long is a piece of string" ?
    As was said previously it depends on the individual razor but 440 C maxes out at 60HRC . Carbon steels can go higher.
